Bananas Foster Gelato

Ingredients

690 g Sugar
150 g Trirapido 50 (DRE 57208 6)
105 g Skim Milk Powder
3000 g Whole Milk
450 g Dairy Cream
600 g Banana Frozen Purée - Thawed (LB 110310)
90 g Banana Flavor Paste (DRE 20281 5)
30 g Jamaica Rum Flavor Paste (DRE 21904 2)
9 g Butter Baking Flavor (70504 0)
10 g Fuit Acid (DRE 53304 9)
As Needed Cinnamon Marmoria (DRE 51304 1)
As Needed Caramel Marmoria (DRE 55406 8)
15 g Crema Volumina (DRE 52418 4)

Directions

  1. Whisk sugar and Trirapido 50 together.
  2. Add skim milk, whole milk and dairy cream.
  3. Blend with power stick blender.
  4. Add Banana Purée, Banana Flavor Paste, Jamaica Rum Flavor Paste, Butter Baking Flavor, Fruit Acid and blend.
  5. Allow to mature for at least 20 minutes.
  6. Add Crema Volumina before pouring into batch freezer.
