Cranberry-Cherry Cheesecake Ornaments

Cheesecake Mixture

17.64 oz (500g) Cream Cheese (soft, room temperature)
17.64 oz (500g) Heavy Cream
3.50 - 7.10 oz (100 - 200g) Powdered Sugar (optional, for a sweeter dessert)
250 ml Water
2.65 oz (75g) Cranberry Flavor Paste (DRE 29804 7)
7.10 oz (200g) Fond Royal Neutral (DRE 12466 7)
3 Per Ornament Amarena Cherries in Syrup (CES 61240)

Glaze

7.10 oz (200g) Jelfix Mirror Glaze (24977)
0.51 oz (15g) Cranberry Flavor Paste (DRE 29804 7)
As Needed Red Food Coloring

Decor

As Needed PurColour Vivid Collection Brilliant Powder Fire Gold (PC 8830)
As Needed PurColour Vivid Collection Brilliant Powder Copper (PC 8867)
1 Per Ornament Mini Ribbon Curl - Red Stripes (96005)

Directions

Cheesecake Mixture

  1. Whip cream cheese with a whip attachment in mixer until smooth and fluffy.
  2. Gradually add in heavy cream 100 g at a time, whipping until fully incorporated before adding more.
  3. Continue to add heavy cream 100 g at a time until all cream has been added.
  4. Add optional powdered sugar for a sweeter dessert.
  5. Whip cream cheese and cream until smooth and fluffy.
  6. Add in water, Cranberry Flavor Paste and Fond Royal Neutral. Mix ingredients until smooth.

Cheesecake Assembly

  1. Pipe cheesecake mixture half way in ornament silicone mold.
  2. Place 3 Amarena Cherries (drained from syrup) inside each ornament.
  3. Pipe cheesecake mixture in ornament silicone mold until filled.
  4. Freeze for at least 3 hours until set and very firm. Unmold when firm.

Glaze & Decor

  1. Combine Jelfix Mirror Glaze with Cranberry Flavor Paste and 3 drops of red food coloring.
  2. Pour evenly on top of cheesecake ornaments and decorate with PurColour Vivid Collection Brilliant Powder Fire Gold and Copper.
  3. Add chocolate decorations as desired.
